BBQ Pulled Chicken with Apple Slaw

I used to think making pulled chicken was difficult. Or would take a long time. I mean, there must be some crazy technique that goes into cooking something so dang delicious! But no. It's as easy as: 

  1. Saute chicken 
  2. Add BBQ sauce 
  3. Rip apart with a fork 
All in about 15 minutes of cooking. Finito! Seriously. How wonderful is 15 minute pulled chicken? Very. And with a sweet, crunchy, tangy slaw to boot. And if you're in a Core period, simply have the chicken over salad or on it's own with a side of veggies.

Ingredients

  • 2 chicken breasts, cut into 1 inch pieces 
  • 1/3 cup BBQ sauce (your favorite flavor) 
  • 2 tsp olive oil 
  • 1/2 tsp pepper 
SLAW: 
  • 1 large apple (red, crispy, and sweet!), cut into matchsticks {Julienned} 
  • 1/2 English cucumber, seeds cut out, julienned 
  • 3 scallions, green part only, thinly sliced 
  • 1/4 cup plain Greek yogurt 
  • 1 Tbsp honey 
  • 1 Tbsp cider vinegar 
  • 2 tsp Dijon mustard 
  • A couple cracks of salt and pepper 
  • 2 large or 4 small whole wheat (If you're in a post-workout grain window)

Instructions

  1. In a medium saute pan, heat oil over medium-high heat and add chicken. Crack pepper over chicken and cook, browning all sides, for about 8 minutes. 
  2. Add BBQ sauce, cover, and simmer for another 8 minutes, or until chicken is cooked through. 
  3. Using 2 forks, shred chicken (while still in the pan with the delicious bbq sauce!). Then mix with bbq sauce in pan over low heat to warm. 
  4. In a small bowl, whisk together yogurt, honey, vinegar, mustard, salt and pepper. Then pour over scallions, apple and cucumber, toss to mix. 
  5. Top a bun or salad with chicken and slaw - enjoy!
