Brussels Sprouts with Walnut-Lemon Vinaigrette

Even if you are generally not a fan of brussel sprouts, give this a shot!  The fresh lemon an nutty walnut oil give it a wonderful flavor! 


  • 1 pound brussels sprouts; trimmed and quartered
  • 2 tablespoons walnut oil
  • 1 tablespoon minced shallot
  • 1/4 teaspoon freshly grated lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon sea salt
  • freshly ground pepper


1. In large saucepan, steam brussels sprouts over 1-inch boiling water until tender - about 7-8 minutes.

2. Meanwhile, whisk remaining ingredients in medium bowl. 

3. Add brussels sprouts to mixture; toss to coat.

Makes 4 servings (about 3/4 cup)
