Chicken Fajitas

This Core Diet alternative to the famous fajitas is much healthier with just a few adjustments.  Add more flavor via spices, use low carb wraps, less oil and high quality lean protein and this meal is perfect for when it seems your refrigerator is empty.  Keep low carb wraps, peppers and chicken in the freezer and you'll also have a go-to meal!  And of course you can substitute with any vegetables!   Use those that are on their last day... never waste! 

Ingredients

  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon dried thyme
  • 1/8 teaspoon ground cayenne
  • 1/2 teaspoon salt
  • half pound (8 oz) chicken tenderloin or stir fry strips
  • 1 green pepper cut into strips
  • 1 red pepper cut into strips
  • 1/2 red onion cut into strips
  • 1 tablespoon fresh lime juice
  • 4 low carb wraps (such as Joseph's Low Carb Wraps)
  • 1 cup salsa
  • 1 container (7.1 oz) 2% Fage Greek yogurt

Instructions

1. Combine spices in small bowl.  Rub half mixture over chicken.

2. Cook chicken on grill, or in grill pan, 6-7 minutes - until cooked through.  Let sit 5 minutes; cut into thin strips.

3. Heat canola oil in pan; add veggies, lime juice and remaining spice mixture.  Cook until veggies are soft, 5-6 minutes.

4. Top each wrap with yogurt, veggies, chicken and salsa. Close roll and serve!
