Pancakes (Ratio <2)

Simple & fast. Why load up with refined sugars if you can make this healthy, core diet ratio <2 pancakes?

Ingredients

  • 1 cup oat flour 
  • 1/2 cup fat free cottage cheese 
  • 3 eggs & 2 egg Whites 
  • 1 tsp vanilla extract

Instructions

  1. Mix the oat flour and the fat free cottage cheese. 
  2. Add the eggs, egg whites and the vanilla extract and mix it well with a fork or in a blender.
  3. Spray a small frying pan and let it heat up until hot. 
  4. Pour about 1/2 of batter into the pan, tilt slightly to form pancake and flip it when you start to see tiny bubbles forming on top of the pancake. 
  5. Fry it until lightly browned. For best delight, serve immediately (you can add a little agave nectar and blueberries for taste and looks!)
