Corn and White Bean Soup

During the cold weather when your craving soup, make up a batch of this for lunch and dinner.  Great option for vegetarians that are looking for ways to get their protein intake up.  Double the recipe to have more for leftovers!

Ingredients

  • 1/2 tablespoon organic canola oil
  • 1/2 cup sliced green onions
  • **3/8 cup chopped, cooked ham (about 4 ounces)
  • 1 1/2 cups fresh corn kernels (about 5 ears)
  • 1/4 teaspoon salt
  • 1 15-ounce can navy beans; rinsed and drained
  • 1 14-ounce can fat-free, less-sodium chicken or vegtable broth
  • 1 4 1/2-ouncd can chopped green chilis, undrained

**Leave out the ham if looking to make vegetarian

    Instructions

    1Heat canola oil in Dutch oven over medium heat.

    2Add onions and ham; cook 3 minutes, stirring frequently.

    3Stir in remaining ingredients.

    4Bring to a boil; reduce heat; simmer 5 minutes or until thoroughly heated.
