Lemon Coconut Cookie Balls

If you are looking for something sweet but without refined sugars and flour, look no further! These cookie balls provides 3 grams of fiber per cookie, are made from only 4 ingredients and you don't even have to cook them!

Ingredients

  • 1 cup roasted almonds 
  • 1 cup pitted dates 
  • 2 lemons 
  • 1/2 cup unsweetened shredded coconut

Instructions

  1. Coarsely chop almonds in food processor. 
  2. Juice the 2 lemons. Add lemon juice and dates into the food processor. Blend until a soft "dough" forms. 
  3. Using your hands, form little balls and roll them in the coconut. Refrigerate the leftovers.
