Quinoa with Orange, Cranberries and Goat Cheese

Makes about five 1 cup servings.  


  • 1.5 cups uncooked quinoa
  • 1 orange, zested and cut into small pieces
  • 3 oz goat cheese (soft log not crumbled)
  • 1/2 cup dried cranberries or other dried fruit
  • 1/4 cup walnuts


  1. Cook quinoa according to package instructions, add orange zest to water for flavor.
  2. Stir in goat cheese until quinoa is evenly coated.
  3. Mix in orange, dried fruit and walnuts
