Salmon Patties served over Greens

From the Endurance Training Diet Cookbook by Jesse Kropelnicki, this week's recipe is a crowd favorite: salmon patties! Canned salmon is relatively inexpensive and a great source of omega-3 fatty acids. It is also perfect for making burgers or patties, as it is already cooked and ready to use. Bonus tip: look for "wild-caught" on the label to avoid additives found in farmed salmon.

Ingredients

1 can salmon (14.75 oz) drained 1/2 cup red onion - finely chopped 1/4 cup parsley - finely chopped 2 Tbsp fresh basil - finely chopped 2 Tbsp lemon juice 1 tsp lemon zest 2 eggs 2 Tbsp olive oil To serve: 1 cup mixed greens 1 avocado

Instructions

1. In a medium bowl, break the salmon into small pieces. 2. Add the onion, parsley, basil, lemon juice zest and eggs. Mix well. 3. Divide the mixture into 4 equal portions and form into patties that are 1" thick. 4. Refrigerate for 30' to set up patties. 5. Heat oil in a skillet over medium-high heat. 6. Place patties in the pan and cook until browned on both sides; about 2 minutes a side. 7. Serve over mixed greens with your favorite veggies. We recommend avocado + a lemon wedge.
