Parchment Tilapia with Tomato, Basil & Garlic

Cooking food in parchment is a classic, healthy technique that yields flavorful results. This may seem fussy, but trust us, it's quite easy and makes for a delicious weeknight meal. No parchment? Feel free to use aluminum foil. 

Ingredients

4 tilapia filets (6oz each) 1/2 cup cherry tomatoes 12 kalamata olives, pitted chopped 4 garlic cloves, finely chopped 20 basil leaves 1 tsp salt 1/2 tsp pepper 4 tsp olive oil 1 lemon, cut into 4 wedges

Instructions

1. Preheat the oven to 400F. 2. Fold x4 12x14" pieces of parchment paper in half. Unfold the paper. 3. Place each filet on one side of the paper. Equally divide the tomatoes, olives, garlic, and basil among the filets. Season with salt pepper. 4. Drizzle the oil and squeeze a wedge of lemon over each filet. 5. Fold the parchment over. Starting from the ends, fold crimp the ends to tightly seal. Repeat with all the filets. 6. Place the packets on a rimmed baking sheet. 7. Bake until the fish is firm: 15-20'. 8. Open your packets enjoy!
