Kale Pesto

We have something GREEN + healthy + easy to make to add to your menu this week: KALE PESTO! The perfect way to sneak in extra green veggies, this sauce is a great addition to: roasted veggies, pastas, rice, eggs, served on crackers or top off your favorite protein. Bonus: store this sauce in the fridge for up to a week for dinner-in-a-hurry.

Ingredients

1/2 cup raw almonds or walnuts 1 small garlic clove 1/4 cup grated Parmesan cheese 1/4 teaspoon salt 1/4 teaspoon pepper 2 cups packed kale (or other combo of other greens: parsley, cilantro, basil, spinach, herbs) 1 lemon, juiced 1/2 cup olive oil

Instructions

1. In a food processor, pulse the nuts and garlic until ground up. 2. Add the cheese, salt, and pepper and pulse again. 3. Add the kale, lemon juice and olive oil. Process until combined. 4. Season to taste. 5. Enjoy!
