Tomato Sauce

Submitted by:Linsey Corbin

September means we are nearing the end of tomato season. What better way to use up those fresh tomatoes than making this quick, easy FRESH tomato sauce that you can store in the freezer for those cooler temps and when it's time to carbo load for your Fall endurance events.

Ingredients

8-10 pounds fresh tomatoes 1 tablespoon olive oil 1 onion, diced 2 garlic cloves, minced 2 teaspoons salt 2 teaspoons pepper 1 teaspoon basil 1 teaspoon oregano 1 tablespoon lemon juice

Instructions

1. Fill a large pot with water and bring to a boil over high heat. Working in batches, drop the tomatoes in the water for 1 minute. Carefully take tomatoes out and place in a large bowl. Let tomatoes cool. Once cool, carefully peel off skins. 2. Chope tomatoes and place in a food processor or blender. Puree until desired consistency for sauce is reached. Set aside. 3. In a large pot, heat olive oil over medium-high heat. Add onions and garlic. Sauté until onions are translucent. 4. Add in basil, oregano, salt, and pepper. Pour in tomato puree and stir well. 5. Bring the mixture to a simmer and let cook, uncovered for 2 hours, or until thickened and reduced. Add lemon juice. 6. Take sauce off heat and cool down to room temperature. Pour into freezer friendly containers and freeze.
