Quinoa-Turkey Stuffed Peppers

If you are looking for a perfect weeknight. meal, try out these stuffed peppers packed with protein: quinoa + ground turkey + black beans. Bonus: makes for a great leftover!

Ingredients

1lb ground turkey 1/2 tsp salt 1 small onion, chopped 1 cup cooked quinoa 1 14oz can fire-roasted tomatoes 1 jalapeno, chopped 2 Tbsp taco seasoning 1 14 oz can black beans, rinsed + drained 1/2 cup shredded cheese of choice 4 large bell peppers garnish: cilantro, avocado, salsa + green onion

Instructions

1. Preheat oven to 350F. 2. In a large skillet brown turkey salt and break into bits. 3. Once cooked, add in chopped onion, garlic and jalapeno. Cook 3-5' until translucent. 4. Remove from heat and add  quinoa, tomatoes, jalapeño, taco seasoning black beans.5 5. Cut peppers in half lengthwise discard seeds. Line peppers on a lightly greased baking sheet 6. Divide filling equally between each bell pepper. 6. Top with cheese and bake for 20 minutes or until pepper is tender. 7. Top peppers with cilantro, avocado, salsa and green onions. Enjoy!
