Ground Turkey Stuffed Peppers

This stuffed pepper recipe has a flavorful, tomato-based sauce and is full of fresh veggies. It is simple to make and you can substitute any number of vegetables you desire, as well as your own seasonings to taste.

Ingredients

  • 1 lb extra lean ground turkey 
  • 1 Tbsp olive oil 
  • 1 16oz can chickpeas 
  • 1 28oz can crushed tomatoes 
  • 2 cups diced tomatoes 
  • 8 green bell peppers 
  • 1 large yellow onion, diced 
  • 1 cup shredded zucchini 
  • 3 cloves garlic, minced 
  • 4 cups baby spinach 1 teaspoon oregano 2 teaspoon basil Feta cheese (optional)

Instructions

  1. Preheat oven to 350
  2. Remove and discard the tops, seeds, and membranes of six of the bell peppers. Arrange peppers in a baking dish with the hollowed sides facing upward. 
  3. Add olive oil to deep pan, chop remaining bell peppers and add to pan with onions and garlic. Cook over medium heat until vegetables are tender. 
  4. Add ground turkey and cook until browned. 
  5. Add zucchini, tomatoes and spinach and cook until spinach is wilted. 
  6. Add crushed tomatoes, basil, oregano and chickpeas. Simmer over low heat, covered, for 15 minutes. 
  7. Spoon equal amounts of mixture into each of the hollowed out peppers. 
  8. Bake for one hour, until peppers are tender. 
  9. Serve sprinkled with 1Tbsp. feta if desired.
