Sweet Chicken

Easy wasy to dress up that plain chicken breast!  Experiment with other all fruit preserves to see what your taste buds prefer.  You can make extra by doubling the recipe to have leftovers for lunch!  Pair this with some greens! 


  • non-stick spray
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 boneless, skinless chicken breasts (about 4 oz each)
  • 2 tablespoons fat-free chicken broth
  • 1/2 cup all-fruit apricot preserves
  • 2 teaspoons honey mustard


1. Preheat oven to 350*F.  Line 9x13-inch baking pan with foil; spray with non-stick cooking spray.

2. In small bowl, crush spices; combine with salt and pepper; rub over both sides of chicken.

3. Place chicken in lined pan; add chicken broth.

4. Bake 20 minutes.

5. In small bowl, mix preserves and mustard; brush or spoon over chicken. Bake additional 10-15 minutes.
