Tofu Lettuce Wraps with Peanut Sauce

Who says lettuce wraps have to contain chicken?  Wait, maybe the better thing to say here is:  Who says tofu can't taste as great as chicken in these lettuce wraps?  Especially doused with a creamy, thick spiced peanut sauce?

This is a fun hands-on meal that everyone will love, even if they don't think they like tofu!

Ingredients

SAUCE:  
  • 1 cup water 
  • 2 Tbsp creamy peanut butter 
  • 4 tsp hoisin sauce 
  • 1/2 tsp crushed red pepper 
  • 1 Tbsp lime juice 

FILLING:   
  • 1 (14oz) package extra firm tofu, drained and crumbled 
  • 1 Tbsp sesame oil 
  • 3 Tbsp soy sauce 
  • 2 tsp sugar 
  • 1 tsp freshly grated ginger 
  • 1/2 tsp Sriracha (hot chili sauce) 
  • 1 cup julienned cucumbers 
  • 1 cup julienned carrots 
  • 8 bib lettuce leaves

Instructions


  • For the sauce: add all sauce ingredients (except the lime juice!) to a small saucepan over medium heat. Whisk, bring to a boil, cook for 1 minute, then remove, stir in lime juice, and let cool.
  • For the filling: Heat sesame oil in a large skillet over medium-high heat. Add tofu, cook for 4 minutes stirring occasionally.
  • Add soy sauce, ginger, sugar, and Sriracha, cooking for another couple minutes.
  • Add carrots and cucumbers, cooking for one more minute and stirring to combine flavors. Remove from heat.
  • Spoon tofu filling into bib lettuce leaves, drizzle with peanut sauce and enjoy!
