Tomato, Basil & White Bean Salad

I love this recipe as a healthy side dish instead of rice or potato. This is also a great recipe to have at a cookout or bring to a party! The garlic and basil make this dish extra tasty! 


  • 2 cans (15 ounces each) cannelloni beans, drained
  • 1/2 pound small plum tomatoes, cut into 1-inch pieces
  • 1/2 cup fresh basil leaves, torn into 1/2-inch pieces
  • 1 teaspoon coarse salt
  • freshly ground pepper
  • 1/4 cup extra-virgin olive oil
  • 3 small garlic cloves, minced


  1. Combine beans, tomatoes, basil and salt in a bowl; season with pepper.
  2. Heat oil in a skillet over medium heat.
  3. Add garlic and cook, stirring, until fragrant but not browned. (11/2- 2 minutes)  
  4. Pour over bean mixture; gently toss.
  5. Let stand 30 minutes before serving; can refrigerate up to 4 hours.
