Chickpea Burgers


 

Ingredients

½ cup dried red lentils
2 cups filtered water
4 tbsp. olive oil
1 medium onion, chopped
½ tsp. sea salt
1 red bell pepper, chopped
4 garlic clothes, minced
2 tsp. ground cumin
1 tsp. ground coriander
½ tsp. ground black pepper
1 tsp. dried oregano
1 tbsp. fresh dill, chopped
1 15 oz. can of garbanzo beans, drained and rinsed
2 large eggs
1.5 cups almond meal
¼ cup (or less) of brown rice or garbanzo bean flour (optional-can help the mixture stick together if it’s not sticking well)

Instructions

1)Cook lentils in water, bring to boil then lower heat to medium and cook uncovered for 30-40 minutes. Place in a mixing bowl.
2)Warm 2 tbsp. of the olive oil in a skillet on medium high heat.
3)Add onions and salt, cook until softened (about 5 minutes).
4)Add the garlic, pepper, cumin, coriander, and black pepper. Cook for another 5 minutes.
5)Stir in the oregano and dill, and transfer to the mixing bowl.
6)Blend chickpeas and egg in a food processor or blender until smooth. Add to the mixing bowl.
7)Add almond meal to the mixing bowl and combine all the ingredients. If the mixture is not sticking together add some flour.
8)Form mixture into 8 balls and flatten into patties.
9)Heat the remaining oil in the skillet and cook the patties for 5-10 minutes on each side (depending on how well done you like them).

Sometimes they can be a little dry, especially if you cook them until they’re very well done. I generally like to have them with a smear of avocado.
