Salmon with Citrus Sauce

I love the flavor of mustard and salmon!  This recipe has the added bonus of the citrus flavor.  For best results, I recommend buying Wild Alaskan Salmon - you won't be disappointed! 

Ingredients

Salmon:

  • several cloves minced garlic
  • olive oil
  • Parmesean cheese
  • salt and pepper

Citrus sauce:

  • 1/4 cup fresh lime juice
  • 1/2 cup fresh orange juice
  • 2 teaspoons sugar
  • 2 teaspoons Dijon mustard
  • 2 tablespoons olive oil
  • coarse salt
  • pepper

Instructions

Salmon:

1. Add olive oil, garlic, Parmesean cheese, salt and pepper to salmon; grill.

 

Citrus sauce:

1. In small skillet over high heat, boil orange juice and lime juice until reduced to 1/2 cup - about 8-12 minutes.

2. Remove from heat. Whisk in sugar, Dijon mustard and olive oil.  Season with coarse salt and pepper.

 

Serve sauce with salmon.
